Miranda Lambert is headed across the country this summer with the Platinum Tour, sponsored by one of my kitchen staples, and new favorites for party drinks, Crystal Light! Last weekend I had the amazing opportunity to see Miranda perform and do some experimentation with my favorite low-calorie drink mix. So read on about my experience seeing Miranda, as well as the recipe for my Miranda-inspired Crystal Light mocktail, the Platinum Pineapple!
Miranda is just adorable and has the music to match. It was so much fun to get this photo with her before she performed at the Walmart AMP in Rogers, Arkansas July 12.
If you haven’t checked out Miranda’s music, I highly recommend it. I don’t consider myself much of a New Country fan, but I love that she is a storyteller above all. She knows about all the things women know about – heartbreak, having the need to get out with the girls, and self-pampering.
Miranda’s show at the AMP was phenomenal. The sound was excellent, and she really does put on a great stage performance. Even those of you in the nosebleed section will get to see Miranda on one of three screens she has on the stage.
The stage show was amazing, frequently changing colors to match the mood of the music.
Her voice is great, and you will hear all your favorites from her: From “Mama’s Broken Heart” to “Over You” to “Automatic” and More.

Now, Crystal Light really is a special drink to me. It’s not just something I grew up with – it really has helped me in my weight-loss journey. Losing 50 pounds isn’t easy, let me tell you. But I did it – and a big part of it was giving up things like juices and sugary sodas for low calorie drinks like Crystal Light. I love that CL even has a line of syrup for my soda maker. But without further ado, let’s get on with this Platinum Pineapple.
Here’s what you’ll need:
Crystal Light Liquid – Tropical Coconut
Crystal Light Liquid – Blueberry Raspberry
First, line the bottom of your chosen cocktail glass with pineapple tidbits. Then, add a squeeze of each of your Crystal Light Flavors. (Note: The Tropical Coconut is mandatory if you want the pineapple flavor, but you can choose the Blueberry-Raspberry or any other of Crystal Light’s many varieties. Maybe even Miranda’s favorite – Strawberry Lemonade.)
Add club soda, stir up your drink, and then you’re ready to add ice and the juice of half a lime.
And there you have it! Now, if I were really fancy, I would have poured this into a hollowed-out pineapple, but let’s be honest – those things are only pretty on tables, and not in your hands.
You can also add more Crystal Light to taste, add a little pineapple juice, or use lemon-lime soda instead of club soda. But this drink is DELICIOUS and Crystal Light makes a great alternative to drink mixes that are expensive in cost and calories! And the best thing about it is that when you’re done with it, you’ve got all these Crystal Light-soaked pineapples at the bottom of your glass. And we all know that any drink with fruit at the bottom is pretty much awesome.
